Oh, bold one, how I do adore
The cheese of Northern Italian lore!
With greens and blues amongst your hues,
The truest bleu for one to choose!

Whence came your splendid salty bite?
Alongside Milan, to the right?
Was it your homestead, your namesake?
This town which elders did forsake.

Is it not where is now Novara?
Crafted with such skill…you are a
Work of art, so pungently bold;
However young, forever old.

Tradition holds – although skill is dearth
Within these regions whence came your birth.
Crumbling before eyes so telling,
Awaits this watery palate dwelling.

Curse ye Stilton! Roquefort! Danish bleu!
Lest it not be known, there is but one cheese true!

Oh, bold one, how I do adore
The cheese of Northern Italian lore!
With greens and blues amongst your hues,

I believe a great poet can write terrifically
about anything. Although I prefer feta, I can
